  • Clubhouse Simulator: Hidden Creek has a new golf simulator in the clubhouse. Members can contact a concierge to reserve this space.  

  • Owner’s Lounge: The new clubhouse at Victoria National, opening spring 2028, will include an Owner's Lounge with a golf simulator, right next to Cafe Vic for food and beverage. 

  • Short-Game Showdowns: If playing 18 isn’t in the cards because of weather or sundown, each club offers a driving range, putting greens, and short game areas. At Ballyhack, the Goat Trak par-3 loop is a fan favorite for a quick, low-stakes round.

Briggs Ranch Executive Chef Hal King utilizes a local game meat called South Texas antelope, or Nilgai. It is a wild antelope native to India and eastern Pakistan that was released on the King Ranch in the 1930s for sport and has multiplied like crazy since. More than 20,000 now roam wild in South Texas. The meat is extremely lean, mild, and tender, reminiscent of elk, and it shines in late summer and fall. Briggs Ranch sources it wild from huge South Texas ranches through Broken Arrow Ranch. 

Featured fall dishes at Dormie Club this season include  

  • Burnt End “Old Fashioned” made with Pork belly burnt ends, bourbon-maple glaze, candied orange, and cherry mostarda 

  • Tomahawk Veal Parm with vodka sauce, North Carolina burrata, pecorino and basil 

  • Braised Beef Raviolis wish sage, brown butter, delicata squash, pumpkin seed gremolata, pecorino 

Fall Cocktails  

Even the cocktails change with the season. At Victoria National, toast the turn of the leaves with a Bananas Foster Old Fashioned. This decadent twist on a classic, pairs the caramelized richness of Bananas Foster with triple-aged Santa Teresa 1796 rum, and it was made for cooler evenings. 

And if the day on the course runs cold, warm up at any on-course comfort station or the main clubhouse bar with a steaming mug of coffee or cocoa. Yes, your bartender will gladly add a splash of Irish cream or bourbon to keep the frost at bay.
