At Victoria National, the Network’s top 100 course in Indiana, Food and Beverage Director Dustin Bergman estimates that close to 95% of a member’s day involves some form of engagement with food and beverage.
Here’s what that might look like when staying at Victoria National. It starts with a fresh-brewed coffee or a light breakfast in the cottage or clubhouse before teeing off. Kari Rogers, Assistant General Manager at Victoria National, recommends refueling with lunch at Café Vic—or having it delivered right to your cart for uninterrupted play. Then, swing by the Turtle Shack on the back nine for a quick refresh before taking on The Gauntlet.

With experience at Dormie Club, Ballyhack, ArborLinks, and Briggs Ranch, Dustin Bergman brings a broad perspective and a constant eye for refinement. He picks up ideas from his travels, whether it’s a beautifully plated dish, the balance of a cocktail, or a smooth-running service team, and translates those touches into something that fits the Dormie Network style. “I take note of what feels intentional and memorable and think about how we can bring that same feeling to the clubs in a way that fits our members and style,” shares Dustin.
Member outreach is also part of the job, coordinating directly with guests before and during their visit to fine-tune and personalize details. This could mean placing a member’s favorite bottle of wine in the cottage or arranging a private dining experience, meal timing, or even a surprise birthday cake!

Dustin recalled one evening when a group was delayed by unexpected travel delays and arrived later than expected, and missed golf that day. But the Victoria National team wasn’t about to let the first impression fall flat.
Determined to make their arrival feel special, the staff quickly pivoted and pulled together a custom private dinner in the group’s cottage, completely last minute. The culinary and serving team stayed late, preparing and delivering a Surf & Turf spread featuring 10 oz filet mignons, fried catfish, crowned lobster tails, and seasonal sides. They paired it with smoked old-fashioneds and set the mood for a relaxed, welcoming evening right in their cottage after a long day of travel.
The guests were blown away—not just by the quality of the meal, but by the warmth, flexibility, and attention to detail. What could have been a quiet evening in the cottage turned into a signature Dormie Network moment.
