At the core of the Briggs Ranch experience is a sense of casual elegance. Arguably the most relaxed in the Dormie Network collection, starched blue jeans and a line of pickup trucks at the clubhouse are common, but the experience found at the upscale Texas Hill Country private club is not.    

From the welcoming smile at the entrance gate to specialty refreshments at the turn, the staff at Briggs Ranch pride themselves on great service and creating an environment where members can truly relax (Ranch Water optional, but recommended).  

Most dining experiences area available throughout the club’s three distinct indoor dining and lounge areas, sizable 18th-green-facing veranda with soft seating, or even at your casita. 

 

Regional Influences

 

Tex-Mex influence weaves throughout the menu with spice at the forefront, with dishes like Gulf redfish ceviche with Leche de Tigre and warm tostadas, or bourbon french toast with caramelized bananas and toasted Texas pecans.

Chef Hal’s dishes marry classic French techniques with South Texas ingredients to showcase the Briggs Ranch perspective: Nilgai antelope tartar from local Broken Arrow Ranch, wild-caught shrimp and blue corn grits with warm cornslaw, and English-style sticky toffee pudding drowned in toffee sauce and a Jack Daniels chantilly, served with Liquor 43 and espresso on ice. 

Chef’s Table Experience

 

Available by reservation, the Chef’s Table Experience is hosted by Chef Hal in the intimate fireside dining room off the main formal dining room, best enjoyed with recommended wine pairings selected from the space’s three chilled displays. 

Each Chef’s Table menu is crafted in collaboration with the hosting member and is presented with an element of surprise. Feel free to ask questions: the team seeks to introduce members at the table to new ingredients, preparations, and flavor profiles. 

Truck Stop mobile bar

 

Offering a culinary experience completely unique to Briggs Ranch, the Truck Stop mobile bar serves up pre-game, post-game, or late-night cocktails and street tacos. By #1, #9, or the short game area per your group’s itinerary, a kegerator, cocktails on tap, range, and upcoming rotisserie means you’ll never go hungry, even when settling the score. 

Rare bourbon bar

 

If sipping is more your style, you won’t want to miss the tucked-away bourbon bar with more than 40 hard-to-find liquors such as Blanton’s, Eagle Rare, W. L. Weller, and the infamous Pappy Van Winkle (both the 10-year and 12-year Special Reserve are available for the club’s most discerning clientele). The bar is inset in the wall near the entrance of the Mixed Grill area and is casually decorated with bourbon barrels. 

Signature cocktails

Outside of the clubhouse, screwdriver fixins have been known to appear on golf carts in the morning, and we firmly believe there’s no better way to wrap up the 18th than with a michelada toast. 

The rest of the club’s specialty cocktail list is distinctively Texan: The Statesman Old Fashioned featuring Old Forester bourbon and a brown sugar cube, Empress 75 as a twist on the gin classic, the fruity Italian Cowboy with Garrison Brothers single barrel, and the paloma-esque Back Nine. 

You won’t go long at Briggs Ranch without someone recommending the club’s signature cocktail, Ranch Water. For a more formal setting or food pairing, try Orin Swift’s ‘8 Years in the Desert’ red blend, which goes well with Texas barbecue. 

Whatever your group size or craving, the staff at Briggs Ranch welcomes the challenge of building an unforgettable trip and surprising your palate with distinctly South Texan flavors you won’t find anywhere else.
